INGREDIENTS

Split yellow mung dal*, long-grain white rice*, parsley*, cilantro*, dill*, coriander*, chives*, fennel*, Himalayan pink salt*.

HOW TO USE

First, bloom your spices. In a medium saucepan, melt 1 tablespoon of ghee and add the contents of the spice packet. Stir until fragrant and the spices start to sizzle. Be careful not to burn them. Add any desired chopped vegetables to the pan and sauté for 1-2 minutes. Next, pour in the rice/bean blend with 5 cups of water; bring to a boil. For a thinner soup consistency, add 1-2 more cups of water. Cover and reduce heat to a gentle simmer. Stir occasionally. Cook 20-30 minutes or until rice and beans are tender and soupy. Season with salt and pepper to taste. Top with optional fresh herbs and a dollop of fresh ghee. Serve warm.
